Ingredients
- 1 cup sella basmati rice
- 1 1/4 cup water
- 1-2 tbsp ghee
- 1-2 cloves
- 2 green cardamon
- 1/2 in cinnamon stick
- 1-2 black peppercorns
- 4-5 slices of coconut (dried or fresh)
- 4-5 halved almonds
- 4-5 halved cashews
- 1/2 tbsp raisins
- pinch salt
- 1 cup sugar
- saffron
- red/orange food colour (optional)
Instructions
- Wash rice and soak for 30min.
- In pressure cooker, add ghee.
- Toast whole spices, nuts, and raisins in ghee for 2-3 min.
- Add in drained rice, and gently stir to mix.
- Add in 1 1/4 cup water, salt, sugar, saffron, and food coloring.
- Close cooker and cook on high flame for 1 whistle.
- Then set on lowest heat for 10-12 min.
- After cooker has de-pressurized, open cooker, and leave partially uncovered for 15min to finish steaming rice.
- Gently stir to fluff rice, and serve.
