Best Baked Potato
Ingredients
- russet potatoes
- Brine = 1/2 cup water + 2 tbsp salt
- 4 oz goat cheese
- 2 tbsp EVOO
- 2 tbsp parsley
- 1 tbsp shallots
- 1/2 tsp lemon zest
- salt+pepper to taste
Instructions
- Preheat oven to 450 F.
- Poke potato with fork 6 times, and quickly dip in brine making sure to coat all sides.
- Place potatoes on wire rack on baking sheet.
- Bake till internal temp 205 F (45-60 min).
- Remove from oven and brush on vegetable oil.
- Bake for another 10 min until crispy.
- Remove from oven, cut "X" on top, and gently squeeze to crush potato and let out the steam.
- For topping, mix the goat cheese, EVOO, parsley, shallots, lemon zest, and season to taste with salt+pepper.
