Best Baked Potato

Ingredients

  • russet potatoes
  • Brine = 1/2 cup water + 2 tbsp salt
  • 4 oz goat cheese
  • 2 tbsp EVOO
  • 2 tbsp parsley
  • 1 tbsp shallots
  • 1/2 tsp lemon zest
  • salt+pepper to taste

Instructions

  1. Preheat oven to 450 F.
  2. Poke potato with fork 6 times, and quickly dip in brine making sure to coat all sides.
  3. Place potatoes on wire rack on baking sheet.
  4. Bake till internal temp 205 F (45-60 min).
  5. Remove from oven and brush on vegetable oil.
  6. Bake for another 10 min until crispy.
  7. Remove from oven, cut "X" on top, and gently squeeze to crush potato and let out the steam.
  8. For topping, mix the goat cheese, EVOO, parsley, shallots, lemon zest, and season to taste with salt+pepper.
