Super-Savory Grated Tofu

Ingredients

  • 1 cup uncooked rice
  • 1 10-12oz block super firm tofu
  • 1 1/2 tbsp oil
  • 4 scallions sliced at an angle
  • 1-2 thai chiles thinly sliced
  • 3 cloves garlic
  • 1 tbsp roasted sesame seeds
  • 3 tbsp soy sauce
  • 1 tbsp Chinese black vinegar
  • 1 tbsp gochugaru (Korean chile flakes)
  • 1 tbsp toasted sesame oil
  • cilantro leaves for garnish

Instructions

  1. Cook rice
  2. Make tofu: dry out tofu block, then grate it using large hole grater.
  3. Heat skillet, add scallions, chiles, garlic.
  4. Add grated tofu to pan. Cook undisturbed for 2 min, then stir. Cook stirring every 2 min until tofu golden brown in some spots (total 10-14 min).
  5. In small bowl: whisk together soy sauce, black vinegar, sugar, gochugaru, and sesame oil
  6. Pour sauce into pan, and cook for 1 min.
  7. Remove from head and sprinkle sesame seeds
  8. Serve over cooked rice aznd top with reserved scallion tops and cilantro.
