Roasted Tomato Salsa

Ingredients

  • 1 lb roma tomatoes, halved
  • 1 tsp kosher salt, plus more to taste
  • 1 medium jalapeño pepper
  • 2 medium cloves garlic
  • 1/2 medium white onion, peeled and quartered
  • 1 chipotle in adobo
  • 1/3 cup finely chopped fresh cilantro
  • 2 tsp freshly squeezed lime juice (about 1/2 a lime)
  • Sugar, to taste

Instructions

  1. Preheat broiler
  2. Line baking sheet with aluminum.
  3. Place tomatoes (cut side up), jalapeño, garlic, and quartered onion.
  4. Sprinkle evenly with 1 tsp salt.
  5. Broil for 20 min, flipping half way through. Then let cool
  6. Transfer broiled veggies and peeled garlic to blender.
  7. Add 1 chipotle in adobo if using.
  8. Pulse blend until desired texture is achieved.
  9. Add in fresh cilantro and lime juice to taste.
  10. Adjust with salt and sugar as needed.
