Roasted Tomato Salsa
Ingredients
- 1 lb roma tomatoes, halved
- 1 tsp kosher salt, plus more to taste
- 1 medium jalapeño pepper
- 2 medium cloves garlic
- 1/2 medium white onion, peeled and quartered
- 1 chipotle in adobo
- 1/3 cup finely chopped fresh cilantro
- 2 tsp freshly squeezed lime juice (about 1/2 a lime)
- Sugar, to taste
Instructions
- Preheat broiler
- Line baking sheet with aluminum.
- Place tomatoes (cut side up), jalapeño, garlic, and quartered onion.
- Sprinkle evenly with 1 tsp salt.
- Broil for 20 min, flipping half way through. Then let cool
- Transfer broiled veggies and peeled garlic to blender.
- Add 1 chipotle in adobo if using.
- Pulse blend until desired texture is achieved.
- Add in fresh cilantro and lime juice to taste.
- Adjust with salt and sugar as needed.
