Coconut Chutney

Ingredients

Chutney
  • 3/4 cup grated coconut (fresh/frozen)
  • 2 tbsp chana dal (or gram or peanuts)
  • 1/8 inch ginger piece
  • 2 green chilies
  • 1/4 tsp salt
  • 1/2 tsp cumin seeds
  • 1/4 to 1/3 cup water (as needed)
  • 1/4 cup cilantro (optional)
  • 1/2 tsp tamrind concentrate
Tadka
  • 1 tsp oil (coconut oil preferred)
  • 1 red chili broken
  • 1 sprig curry leaves
  • 1/4 tsp mustard seeds
  • 1 pinch asafoetida

Instructions

  1. Dry roast cumin seeds and chana dal
  2. Blend together coconut, ginger, cumin, chana dal, green chili
  3. Use as little water as possible
  4. Add tamrind to taste, and adjust salt as needed
  5. Then temper the chutney with the ingredients listed (add curry leaves and hing last).
